This cheese just beckons with its eyes! Meet Maasdam! Maasdam is a semi-hard cheese. It has a sweet-nutty flavor and the eyes range in size from 1 to 3 cm. Originally from the Netherlands, this variety got its name after a small Dutch town Maasdam. The Dutch cheesemakers wanted to surpass the Swiss and invented their own cheese in the XIV century. That's how this particular variety was created, which stands out among its cheese counterparts. The big eyes are the "work" of propionate bacteria. By the way, the eyes are not just a distinctive feature of the variety, they are a kind of indicator of the ripeness of the product. At the Verkhnedvinsk butter and cheese factory, large heads of cheese mature on shelves for at least a month, and once every three days they are turned over to make sure the eyes are properly rounded. By the way, Maasdam from Verkhnedvinsk cheese makers got a gold medal at the "Best Product 2019" contest at the international exhibition PRODEXPO 2019 in Moscow! To fully enjoy the taste of Maasdam, they recommend eating it separately from all products. The cheese plate can be supplemented with bread, fresh vegetables or fruit. But this cheese melts perfectly, so it is also ideal for cooking, for example, hot sandwiches, pizza or fondue.
